Easy Homemade Fish Sticks

Everyone in the house loved these homemade fish sticks, so they will be a repeat item for sure.

4 tilapia filets

1 cup coconut flour

1 tsp salt

2 eggs

Coconut oil for frying

Mix the coconut flour and the salt together in a small dish. In a separate small dish, stir the eggs. After fish filets have been defrosted (if frozen), cut them across the width into 1 inch strips. Heat the pan with the coconut oil on medium heat. Pan should be fully heated before you place the fish in. Dip each piece of fish first into egg, then roll into flour mixture and place into the hot pan. Fry about 3 or 4 minutes on each side; golden brown color is a good guide. Be sure fish is cooked thoroughly, you can use a meat thermometer to be sure. Serve while hot with your favorite dipping sauce and enjoy! I love easy simple recipes.
