Chicken Sausage Patties


Homemade sausage patties are so much easier to make than I initially thought. It’s all about the seasoning blend. This recipe uses ground chicken, but I’ve made them with ground turkey also. I haven’t tried ground pork, but I will at some point for variety. They are pictured here as a typical breakfast with scrambled eggs and fruit (pineapple). They also are delicious on gluten free biscuits too! (Try brand 1 2 3 Gluten Free for biscuit mix.) I usually make 3 lbs. worth of theses sausage patties, but the recipe below is for 1 lb. of ground meat.

Seasoning Mix (per lb. of meat)

1/2 tsp parsley

1/2 tsp sage

1/4 tsp rosemary

1/4 tsp marjoram

1/2 tsp salt

Mix the seasoning in a small bowl and then add to the ground meat. Heat a pan to about medium and add coconut oil for frying. Form meat into patties of desired size. I get 6 patties per pound for these. When the oil is hot, place patties in pan. Cook about 6 or 7 minutes per side. They are ready when a meat thermometer reads 170F. These are delicious anytime, not just at breakfast.
