Sometimes I just need enough frosting for one or two cupcakes – like when the kids are going to a birthday party. If I make a whole batch I just end up eating the rest of it! So I finally realized I can just make as much frosting as I’m going to use. So, to frost two cupcakes, you will need:
About 3 tablespoons softened butter or coconut oil
About 1/2 cup powdered sugar
A few drops of vanilla extract
Less than an 1/8 of a tsp of salt
About a tsp of milk or milk substitute
In a small dish place about 2 or 3 tablespoons of softened butter. It’s got to be soft, so leave it at room temperature well before you want to make the frosting. Then add the powdered sugar, vanilla, and salt, but not the milk yet. Mix those ingredients together, if you have a tiny whisk, then that works really well. If not, a spoon will get the job done. Then add as much milk as you need to get your desired consistency. Frosting is very forgiving – you can add more powdered sugar if it’s too wet, and more milk if it’s too dry. This should make enough for two cupcakes, plus maybe just a *bit*extra for sampling!
