Potato Mash-Up

Potato Mash-Up is not a mashed potato recipe. It is a recipe for roasted white and sweet potatoes cooked together in the same pan. The result is beautiful! (And delicious of course.) You will need:

1 large sweet potato

About 6 medium white potatoes

Large roasting pan

Large mixing bowl

Coconut oil

Olive oil

Salt

Set your oven to 375. Grease a big roasting pan with coconut oil. I use a non-stick pan. Peel the potatoes, cut them into approximately equally sized pieces, and place them in large mixing bowl. Mine are about two inches long, an inch wide, and a half inch thick. In a large mixing bowl, drizzle with plenty of olive oil and sprinkle with salt. Stir the potatoes so that they are nicely coated with salt and olive oil. Pour them into the large roasting pan, shake the pan so they spread out evenly in it and put them in the oven. They roast for about 60 minutes, and after 30 minutes I take them out of the oven to mix them up in the pan and put them right back in. Enjoy!
